Quick Breads

STIR-AND-DROP BISCUITS

(use as topping for Shepherd's Pie or by themselves)

Stir together:

2 c. sifted flour
3 tsp. baking powder
1 tsp. salt

Place in measuring cup (don't stir:)

1/3 c. salad oil
2/3 c. milk

Add all at once to flour mixture.

Stir with fork and drop on gravy.

Bake at 450 degrees.

DATE LOAF

Mix together:

3/4 c. nuts
1 c. chopped dates
1 1/2 tsp. baking soda
1/2 tsp. salt
3 tbsp. shortening
3/4 c. boiling water

Let stand 20 minutes.

Beat and add to date mixture.

2 eggs

Beat in:

1 tsp. vanilla
1 c. sugar
1 1/2 c. sifted flour

Bake at 350 degrees about 1 hour.

PUMPKIN LOAF

Mix as listed:

4 eggs
2 c. white sugar
1 scant c. of oil
One 14-oz. can pumpkin
2 c. flour
2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. salt
Raisins and nuts

Bake at 350 degrees for 1 hour

Makes 2 or 3 loaves

DELICIOUS BRAN MUFFINS

Cream together:

1/4 c. shortening or margarine
1/2 c. brown sugar

Add:

1/4 c. molasses
2 eggs
1 c. milk
1 1/2 c. bran

Then stir in:

1 c. flour
11/2 tsp. soda
3/4 tsp. salt
Raisins

Bake in muffin pans at 400 degrees about 15 minutes.

RAISIN LOAF

Place in saucepan:

2 c. sugar
2 c. hot water
2 c. raisins
1 c. cold shortening

Boil till shortening is melted.

Remove from heat and add:

2 tsp. soda

Cool and add:

2 3/4 c. flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
Nuts (if desired)

Is best baked in 2 small loaf pans at 350 degrees.

MOM'S WHOLE WHEAT MUFFINS

Cream together:

2/3 c. shortening
1/2 c. sugar
1 egg

Add:

1 1/2 c whole wheat flour
1/2 c. white flour
1 rounded tsp. baking powder
1 c. sour milk with 1 tsp. soda
1 scant tsp. sale
Raisins, if desired

Bake in hot oven.

Delicious served warm with butter and syrup.

CARROT BREAD

Beat well:

3 eggs

Add and beat:

1 1/2 c. sugar
1 c. oil

Add:

2 1/4 c. whole wheat flour
1 1/4 tsp. soda
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
3/4 tsp. salt
2 1/4 c. grated carrot
Nuts and raisins

Bake at 350 degrees. Makes two small loaves or one very large loaf.

NO-RISE BUTTERHORNS

Cream together:

1 c. margarine
12 oz. cottage cheese

Add:

2 c. flour
Dash of salt

Divide dough in 3 parts. Roll each part in a circle and cut into 12 wedges. Roll up from wide to narrow of each wedge.

Bake on a cookie sheet 30-40 minutes at 350 degrees.

Frosting:

1 c. icing sugar
1 tbsp butter
Vanilla
1 tbsp. milk

Best served fresh
