Supper and Salad Dishes

SUNDAY MOCK DUCK

Take one full round-cut round steak, and sprinkle with salt and pepper.

Prepare bread dressing (your usual recipe).

Pile dressing onto steak in a roll down the middle.

Close with skewers or tie with string and sprinkle with salt and pepper.

Roll in tin foil (two thicknesses all around).

Fold more tin foil 4 thicknesses to place under the roll in cake pan.

Bake at 325 degrees about 21/2 hours.

Remove skewers and slice.

Friends need love from friends. But how many of us love our friends for what they are, embracing faults, failures and selfish streaks and not for how they make us feel?

ANITA'S CHOW MEIN

Chop cooked meat (pork. beef or chicken) finely and brown in oil. 1/2 tsp. sugar. salt. pepper. garlic and accent. (Use these spices as desired.)

Add:

4 onions, chopped
Celery, sliced
Cabbage, chopped
Salt

(Keep heat very low-no water necessary-vegetables will provide moisture. Remember that this mixture will shrink greatly-a full pan will be about half full when cooked.)

When vegetables are tender (about 1 hour). add 1 can of bean sprouts.

Thicken with 2 tbsp. cornstarch mixed with 2 tbsp. soya sauce and a little water if necessary.

Just before serving. mix in 1 large can of chow mein noodles.

SWEET-AND-SOUR SPARERIBS

Brown small, cut ribs in open pan in hot oven, stirring occasionally.

Drain off fat and pour the following sauce over ribs (double or triple the amount so as to almost cover the ribs):

Bring to boil in saucepan.

1 c. water
1/2 c. brown sugar
1/4 c. vinegar
4 tsp. cornstarch
1 tsp. salt
1 tsp. soya sauce

Continue to bake ribs uncovered in medium oven until sauce is thickened (about 1 hour.)

FRIED RICE

(with beef, chicken or shrimp)

Cook any amount of rice desired. (It is best prepared the day before and stored in the frig.-this removes the moisture.)

Brown rice in salad oil and 1/2 tsp. sugar.

Add:

Meat (canned baby shrimp are colorful and delicious!)
Cooked green peas
Green onion
Mushrooms (button type look nice)
Soya sauce to taste

Stir and heat carefully.

SLOPPY JOES

(our favorite Friday night supper)

Brown hamburger with onions.

Add:

1 can tomato soup rinsed with little water

Simmer a few moments.

Serve on hamburger buns.

SUPPER SALMON LOAF

Mix together:

1 tall tin salmon
1 c. soft bread crumbs
1 c. milk
2 eggs, beaten
A little lemon juice
Parsley and onion flakes to taste :
Salt and pepper

Bake about 45 minutes at 350 degrees.

Even if you don't feel your love is important, give it anyway.

FAVORITE FAMILY CHILI

Brown:

1 pound hamburger (salt and pepper added)

In large casserole place:

1 can kidney beans
1 can pork and beans
1 can tomato soup

Rinse out cans generously with water and add to the mixture.

Add:

1/2 c. catsup (more or less)
2 tbsp. chili powder (to taste)
2 onions finely chopped or grated
Some red and green peppers if desired

(If your kids are like mine-pepper and onion haters, here's a hint. Cut them coarsely in a blender, cover with water and chop. Drain (or pour water and all into chili) and then add to chili mixture. You'll have the benefit of the flavour, but not the "hunks.")

Bake in slow oven, covered, for about 1 1/2 hours

Serve over boiled rice or with buns.

QUICK TUNA CASSEROLE

In greased casserole, place:

About 2 c. cooked rice
1 can cream of mushroom soup
Parsley and onion flakes to taste
1 tin tuna
1/2 c. milk

Cover with crushed potato chips.

Bake at 350 degrees about 40 minutes.

Good with green peas and buns.

SHEPHERD'S PIE

Cook chopped onion in butter until clear.

Add left-over gravy (augment with canned or dry mix if necessary), cold roast (cut fine), 1 cooked potato (chopped fine).

Place in casserole in hot oven and heat until bubbling.

Drop spoonfuls of biscuit dough and return to hot oven until brown.

(If the gravy mixture in not boiling when the dough is dropped in, it will be soggy.)

MEATY SPAGHETTI

Brown in olive oil:

Hamburger
Onions
Green and red peppers, chopped

Add:

1 can tomato soup t

Simmer 1 - 2 hours, uncovered.

Serve over hot spaghetti.

Any leftover sauce and spaghetti may be mixed, put in a casserole and heated in the oven for the next day. (Add a bit of water before putting in oven.)

Real love is ready at all times for discomfort, which is the quickest way I know for us all to realize how little we know of real love.

CASSEROLE SUPPER DISH

Brown in 3 tbsp. salad oil:

1/2 pound ground meat (moose meat is good)
1/2 pound ground pork (less if using beef above)

Add:

2 c. chopped onion
1 c. chopped celery

Sprinkle generously with:

Salt
Pepper
Chili powder (to taste)

When vegetables are tender, mix in:

1 can tomato soup
1 can golden mushroom soup or cream of celery soup
1 1/2 c. water
1 large can (5 oz.) chow mein noodles

Bake about 45 minutes in medium oven.

SUNSHINE SLAW

Chop cabbage finely.

Add:

Pineapple tidbits
Miniature marshmallows
Mayonnaise to moisten

Place in serving dish and sprinkle with a little paprika.

Good and can be prepared a bit ahead.

If you have a blender, chop the cabbage coarsely with it. Cover with cold water and chop a few seconds. Drain into a sieve. Other ingredients may be mixed in the sieve as well. If you don't wish to keep the pineapple juice for another purpose, pour it over the cabbage. Gives a nice flavour.

ORANGE SALAD DELIGHT

One 3 oz. pkg. orange jelly powder
1 pint cottage cheese
1 can crushed pineapple, drained
1 can mandarin oranges, drained

Mix and fold in 2 pkg. prepared dessert whip.

Let stand several hours or overnight.

Makes a large salad.

HOLIDAY SALAD

Set to egg-white consistency:

1 pkg. lime jello
1 c. boiling water
J1 c. miniature mallows

When ready, beat and add:

1 pkg. whipped topping, prepared
1 c. shredded cabbage
1 c. finely chopped celery
1 c. crushed pineapple
1/2 c. walnuts or pecans

Allow to set in mold.

SUMMER FRUIT SALAD

(easy and delicious)

Cook over hot water:

2 beaten eggs
1/4 c. lemon juice
4 tbsp. sugar

Prepare:

2 pkgs. dessert whip

Add cooled custard to prepared whip.

Stir in:

Pineapple cubes
Fruit cocktail
Fresh fruit. etc.
2 c. min. marshmallows

With love...

Love breeds sensitivity, not touchiness. And there is a wide difference.
