GOLDEN PUMPKIN PIE

In bowl mix:

1 1/2 c. canned pumpkin
3/4 c. sugar
1/2 tsp. salt
1 heaping tsp. cinnamon
3/4 tsp. ginger
1/2 tsp.nutmeg
1/2 tsp. cloves

Add:

3 eggs, slightly beaten
1 1/4 c. milk
2/3 c. canned milk

Pour into unbaked crusts, and bake at 400 degrees.

FAVORITE FUDGE PUDDING

(for an oven supper)

Mix in small bowl:

1 c. flour
2 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar
1/2 c. milk
2 tbsp. salad oil

Spread in 7x12-inch pan (it will be thin.)

In same mixing bowl place:

1 c. brown sugar
1/4 c. cocoa
1 3/4 c. hot water

Pour over batter.

Bake at 350 degrees about 40 minutes.

YUMMY NO-BAKE CHEESE CAKE

Make crust of:

2 c. graham crumbs
1/2 c. margarine
1/2 c. brown sugar

Pat into large pan.

Beat together:

8 oz. cream cheese
1 c. icing sugar

Beat gradually into:

1 pkg. dessert whip, prepared

Spread over crust.

Top with canned pie filling-cherry, strawberry, blueberry, etc.

Chill.

PINEAPPLE CUSTARD

(cool, light and quick)

Bring to boil:

Juice from 1 can crushed pineapple
1 beaten egg
1 tbsp. flour
1/2 c. sugar

Cool.

Prepare 1 envelope dessert whip.

Gradually add to first mixture along with crushed pineapple.

Serve in dessert dishes.

For pie:

Melt together, cool and add to above:

1/2 c. marshmallows
1/2 c. milk

STRAWBERRY SWIRL

Make crust of:

1 c. graham crumbs
1/4 c. melted butter or margarine
1 tbsp. sugar

Bake until brown.

Prepare:

One 3-oz. pkg. strawberry jelly powder
1 c. boiling water
1 pkg. frozen strawberries

Chill until partly set.

Melt in double boiler:

1/2 pound marshmallows
1/2 c. milk

Cool and add:

1 pkg. prepared dessert whip

Marble with strawberry mixture and pour over crust.

Chill and serve with a dab of whipped cream, if desired.

MOM F'S BAKED RICE PUDDING

In greased casserole place:

Approx. 3 c. milk .
1/4 c. rice
1/4 c. sugar
Vanilla

Bake at 325 degrees.

Stir occasionally.

Remove from oven when it begins to get creamy - about 2 hours.

Raisins may be added during baking.

Recipe may be adjusted for larger quantity - good warm, sprinkled with brown sugar and cinnamon.

QUICK APPLE CAKE

Place in large bowl:

4 c. chopped apples

Add and mix:

2 eggs

Then add:

1 1/2 to 1 3/4 c. sugar
2 tsp. cinnamon
1 tsp. nutmeg
Nuts, if desired
2 c. flour
1 tsp. salt
1 tsp. soda

Mix well. The mixture will be quite dry and hard to stir.

Spread in large ungreased pan.

Bake at 350 degrees about 40 minutes.

This makes a lovely, moist dessert - just as good warm, with cream or ice cream, as cold.

GELATIN MOLD DESSERT

Mix:

2 small (1 large) pkg. lemon jelly powder
2 c. boiling water .
'/2 c. sugar
1 c. cold water
1 c. orange juice
Orange rind

Cool until partially set.

Prepare 1 pkg. dessert whip or 1/2 pint whipping cream and fold into jelly.

Dice 1 sponge cake and fold pieces into jelly mixture

Pack into pan and cool.

Serve with a dollop of whipped cream or dessert whip.

PUMPKIN ICE CREAM MOLDS

Mix:

1 c. canned pumpkin
1/2 c. brown sugar
1/4 tsp. salt
1/4 tsp. cinnamon
Sprinkle of cloves
1 quart vanilla ice cream, softened

Stir together until well blended.

Pour into individual molds or oblong pan.

Freeze at least 24 hours and serve with hot mincemeat sauce.

Sauce:

Mix together:

Approximately 2 c. mincemeat
Grated orange rind
1/2 c. apricot nectar

Lovely for Thanksgiving dinner or other special occasions.

ELEGANT NO-BAKE CHEESECAKE

Stir together till somewhat thickened:

1 can sweetened condensed milk
1/3 c. lemon juice

Beat:

8 oz. cream cheese

Blend into milk and lemon mixture.

Pour into graham wafer-lined pan.

Chill. Cover with canned pie filling (cherry, blueberry, strawberry, etc.)

Delicious!

OLD-FASHIONED BREAD PUDDING

Place in buttered casserole:

3 c. soft bread cubes

Pour over:

2 c., milk, scalded
1/2 c. sugar
2 eggs, slightly beaten
1/4 tsp. salt
1 tsp. nutmeg

Place in pan of hot water and bake at 350 degrees about 45 minutes.

BAKED CRUMB PUDDING

(also Cream Pie Filling)

For leftover white cake crumbs:

Make Chocolate Sauce recipe (elsewhere in this book), thickening a little extra.

For chocolate cake crumbs, make the following

Vanilla Pudding:

Heat to boiling:

1 3/4 c. milk

In large measuring cup, mix and add to boiling milk:

1/4 c. milk
2 egg yolks, beaten in the milk
3 tbsp. cornstarch
1/2 c. sugar
1/4 tsp. salt

Stir and cook till thickened.

Remove from heat and add:

1 tsp. butter
1/2 tsp. vanilla

In casserole dish, place a layer of hot pudding, then crumbs, pudding, etc., ending with pudding.

Make a meringue of the egg whites. Put on pudding and bake at 375 degrees till golden. Serve warm or cold.

Vanilla Pudding may be used as a cream pie filling.
