GRAHAM WAFER CAKE

(quick, easy, no-bake)

Line bottom of medium-sized pan with whole wafers.

Bring to boil:

1/2 c. milk (canned is best)
1/2 c. margarine
1 c. brown sugar

Remove from stove and add:

1 c. cocoanut
1 c. crushed wafers

Pour over wafers in pan, cover with more whole wafers and, when cool, ice with vanilla butter icing.

ECONOMY OATMEAL SQUARES

(crisp and delicious!)

In saucepan, melt:

1/2 c. margarine

Remove from heat and add:

1 c. brown sugar
2 c. oatmeal
1/2 tsp. baking powder

Press into ungreased pan to about 1/4 inch thickness.

Bake just until brown at 350 degrees.

It will harden as it cools.

LEMON BARS

(calls for lemon and orange juice)

Mix as for pastry:

10 soda biscuits (double)
1 c. brown sugar
1/2 c. margarine
1 c. flour
1/2 tsp. soda
1 c. cocoanut

Pat about 3/4 of mixture into 7x12-inch greased pan.

Make filling by boiling together:

1 c. sugar
2 tbsp. cornstarch
2 eggs, beaten
1 c. water
Juice of 1 lemon
Juice of 1 orange
1/4 c. butter

Spread over the base.

Top with remaining crumbs and bake at 350 degrees.

CHERRY SQUARES DELUXE

Make base of:

1/2 c. margarine
1 c. sifted flour
2 tbsp. icing sugar

Bake 5 minutes at 350 degrees.

Beat together:

2 eggs
1 c. brown sugar
1/4 c. flour
1/2 tsp. baking powder
1/4 tsp. salt
1 c. nuts
1 c. maraschino cherries, chopped
Vanilla

Bake at 350 degrees until brown and firm.

Ice with Whipped Cream Frosting.

JUMBO RAISIN COOKIES

(big and fat, soft and good)

Boil for 5 minutes:

2 c. raisins
1 c. water

Cream:

1 c. shortening or margarine
2 c. sugar
3 eggs
1 tsp. vanilla

Add to raisins:

Creamed mixture above

4 c. flour
1 tsp. baking powder
1 tsp. soda
2 tsp. salt
11/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice

Mix well, drop on greased cookie sheet and bake.

GINGER SNAPS

(the real thing!)

Mix together:

2 c. white sugar
2 eggs
1 c. margarine
1 c. molasses
2 tsp. ginger
1 tsp. soda
1 tsp. salt
4 c. flour

Form into small balls.

Place on cookie sheet and bake.

OUR FAVORITE CHOCOLATE CAKE

(sour milk, easy on the cocoa)

Beat together until smooth:

1 c. white sugar
1/2 c. margarine
2 eggs
1 c. sour milk .
1 tsp. soda
1/2 tsp. salt
21/2 tbsp. cocoa
11/2 c. flour

Bake at 350 degrees.

CURRANT CRUMB CAKE

Crumble:

2 c. flour
3/4 c. butter or margarine
1 c. sugar

Set aside 1 c. crumbs.

Mix remaining crumbs with:

1 egg
1 c. sour milk
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. soda
1 tsp. cloves
1 c. currants

Place in pan. Sprinkle with remaining crumbs.

Bake at 350 degrees.

Best served slightly warm.

CHOCOLATE SLICES

Make base of:

3/4 c. flour
3 tbsp. sugar
Dash of salt
3 tbsp. cocoa
1/2 c. butter

Beat together:

2 eggs
1 1/2 c. brown sugar
1 tsp. baking powder
3 tbsp. flour
Vanilla
1 c. cocoanut
1/2 c. nuts

Bake at 350 degrees about 15 minutes.

Ice, if desired, with chocolate butter icing or Whipped Cream Frosting.

POPPY SEED CHIFFON CAKE

Soak for 2 hours:

1/2 C. poppy seed
1 c. water

Place in large bowl and beat till stiff:

7 egg whites
1/2 tsp. cream of tartar

Place in large bowl and combine well:

2 c. flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt

Add and beat until smooth:

1/2 c. oil
Poppy-seed-and-water mixture
2 tsp. vanilla
7 egg yolks
1/4 tsp. soda

Fold yolk mixture into whites.

Bake in ungreased tube pan for 50 minutes at 325 degrees. Then increase heat to 350 degrees and bake 10-15 minutes longer.

Orange Glaze:

Heat together:

2 tbsp. syrup
1 tbsp. oil

Add:

1 c. icing sugar (sifted)
2 tbsp. orange juice
Rind of 1 orange

Pour over cake. Gives a lovely tart flavour.

FRUIT CAKE

Beat well:

1 c. margarine
1 c. brown sugar
2 tsp. vanilla
1 tsp. almond extract
1/2 tsp. salt
3 eggs

Add:

1/2 c. syrup
1/2 c. fruit juice

(the colour of this will determine to a great degree the lightness or darkness of the cake)

3 c. flour
2 tsp. baking powder
1 tsp. soda

Stir into cake batter:

4 c. raisins
1 c. nuts
1 c. cherries
1 c. mixed fruit (which has been floured with 1/2 c. flour)

Place in lined pans and bake about 3 hours in slow oven (275 degrees).

CHOCOLATE POUND CAKE

Cream:

1 c. butter or substitute

Beat in well:

2 1/2 c. sugar
5 eggs

Add:

3 c. sifted flour
1/2 c. cocoa
1/2 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 tsp. vanilla

Beat till blended.

Spoon into greased and floured tube pan.

Bake approximately 1 1/2 hours in slow oven (325 degrees.)

Cool about 10 minutes and remove from pan.

Keeps well when wrapped in foil. Or glaze with butter icing. Pour over the top and allow to trickle down the sides.

EZ OATMEAL CAKE

Cream:

1/2 c. butter
11/2 c. brown sugar
3 eggs

Add:

2 c. oatmeal
1 1/4 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla

Lastly, beat in:

1 c. boiling water

Bake in large pan. Is delicious with butter icing.

NEVER-FAIL CHIFFON CAKE

Stir together:

11/2 c. flour
11/2 c. sugar
3 tsp. baking powder
1 tsp. salt

Beat in:

1/2 c. salad oil
7 egg yolks
3/4. c. cold water
1 tsp. vanilla

Measure into large bowl:

1 c. egg whites (about 7)

1/2 tsp. cream of tartar

Beat until stiff.

Gently fold egg yolk mixture into beaten egg whites.

Bake in tube pan at 325 degrees for 55 minutes, then at 350 degrees for 10-15 minutes.

Cool upside down on rack.

Orange Chiffon: add 2 tbsp. grated rind

Chocolate chiffon: reduce flour to 1 1/4 c. and add 1/4 c. cocoa

Maple Walnut chiffon: add 1 tsp. maple extract and finely chopped walnuts

CRAZY CAKE

Bring to rolling boil:

1/2 c. syrup
1/2 c. sugar
1/2 c. margarine
4 tbsp. cocoa
1 tsp. vanilla .

Pour over 8 c. puffed wheat and press into buttered pan.

CARROT CAKE

Beat together:

1 c. salad oil
1 c. sugar

Add:

3 eggs, beating in one at a time

Add:

1 1/3 c. flour
1 tsp cinnamon
1 1/3 tsp. soda
Walnuts, if desired
2 c. grated carrots
Pinch of salt

Bake at 350 degrees. Delicious with Cream Cheese Icing.

BEST EVER BUTTER TARTS

Line muffin tins with pastry.

In small saucepan melt:

1/3 c. butter (no substitute for best results)

Remove from heat and add:

1/2 c. brown sugar
1/2 c. syrup
1/2 c. or more currants or raisins
1/2 tsp. vanilla
1/4 tsp. salt
1 egg. slightly beaten

Bake at 400 degrees until brown and bubbling well.

This will fill about 20 tarts.

OUR FAVORITE BROWNIES

(makes a cookie sheet full- not rich)

Melt in saucepan:

1 c. margarine

Remove from heat, add and beat together:

2 c. white sugar
1/4 c. cocoa
4 eggs

Add:

11/2 c. flour
1 tsp. salt
2 tsp. vanilla

Bake in cookie sheet at 350 degrees.

No icing. Just "plain" good.

QUICK CHOCOLATE SAUCEPAN COOKIES

Melt in large saucepan:

2/3 c. margarine

Add:

11/2 c. sugar
2 eggs
1/2 c. cocoa
11/3 c. flour
Dash of salt
1 tsp. baking powder

Drop well apart on greased cookie sheet.

Bake. They're crisp and good!

UNCOOKED CHOCOLATE CLUSTERS

(oatmeal, cocoa, cocoanut)

Boil hard for 5 minutes:

2 c. sugar
1/2 c. margarine
1/2 c. milk
1/2 c. cocoa

Remove from heat and add:

1 tsp. vanilla
Dash of salt
3 c. oatmeal
1 c. cocoanut

Immediately drop by spoonfuls on wax paper.

FRUIT BARS

Beat until fluffy:

2 eggs
11/2 c. sugar

Add

1 can fruit cocktail (juice and all)
1/2 tsp. salt
2 1/4 c. flour
1 1/2 tsp. soda
1 tsp. vanilla

Pour into large cookie sheet.

Sprinkle with cocoanut and/or nuts.

Bake at 350 degrees for approximately 25

While still warm, ice with the following glaze:

Mix well over heat (do not boil):

3/4 c. sugar
1/2 c. butter
1/4 c. evaporated milk
1/2 tsp. vanilla

These are lovely and moist and make a large pan full. Especially nice for taking to special "do's."

Melt in saucepan:

Beat in by hand:

1 c. brown sugar
1 egg
1/2 c. flour

Bake in 8-inch pan at 350 degrees.
