SEVEN-MINUTE ICING
(not sugary, forms no crust)
Place in top of double boiler over boiling water:
2 egg whites
1/2 c. sugar
1/2 c. corn syrup
1/8 tsp. salt
Beat until stiff.
Remove from heat and beat one more minute adding 1 tsp. vanilla and food coloring if desired.

MAPLE CREAM FUDGE
Boil to soft-ball stage:
3 c. brown sugar
3 tbsp. butter
2/3 c. milk
Cool slightly.
Add vanilla and beat.

CREAM CHEESE FROSTING
(delicious on carrot or banana cake)
Beat well:
4 oz. cream cheese
2 tbsp. butter (preferably no substitute)
Vanilla
11/2 c. icing sugar

CARAMEL FR0STING
Heat over low heat:
1/4 c. canned milk
6 tbsp. brown sugar
1/4 c. margarine
1/4 tsp. salt
Do not boil, but heat only till dissolved.
Remove from heat.
Stir in 2 c. icing sugar and vanilla
Spread on cake.

FRIDAY NIGHT FUDGE
Boil to soft-ball stage:
2 c. sugar
2/3 c. milk
1/3 c. cocoa
2 tbsp. corn syrup
1/4 tsp. salt
Remove from heat.
Add 2 tbsp. butter. Do not stir.
Cool until lukewarm. add 1 tsp. vanilla and beat.
If you wish to save a dish, pour out onto buttered tin foil.

PENUCHI
(simple, neverfail fudge)
Cook to soft-ball stage:
2 c. brown sugar
2/3 c. milk (preferably canned)
Remove from heat.
Add 1 tbsp. butter without stirring.
Cool. Beat until creamy.
Add vanilla and nuts if desired.

NEVERFAIL FUDGE FROSTING
Boil together one minute:
1 c. white sugar
1/4 c. butter or margarine
1/4 c. cocoa
1/4 c. milk
Cool. then beat until creamy but not too thick.
Spread on cake.

The person who is learning to love responsibly is the person who is learning to respond - not only to those whom he finds easy to love, but to those with whom he disagrees, who naturally repel him, who have mistreated him or in some way failed him. WHIPPED CREAM FROSTING
(only no whipping cream!)
Beat Well:
8 tbsp. soft butter
12 tbsp. Icing sugar
Beat in slowly.
2 tbsp. milk
2 tbsp. boiling water
Add vanilla.
This will be the consistency of whip cream and makes a lovely icing for squares or cake.

CHRISTMAS CHOCOLATES
(traditional Christmas treat!)
Mix well in a large bowl:
3 pounds icing sugar
3 tbsp. cornstarch
1 tin sweetened condensed milk
1/2 pound butter (no substitute)
Divide into small bowls to make various flavours:
Peppermint - color green
Maple with walnuts
Pink-coloured, wrapped around maraschino cherry
Vanilla with cocoanut added
Melted chocolate
Form into small balls.
In double boiler over low heat melt:
1/4 bar parowax
1 box semi-sweet chocolate
Dip chocolates (a large darning needle works well and hole can be covered with a chopped walnut). Place on wax paper to cool.
(Chocolate must be kept over low heat for entire process.)
