Odds 'n Ends

MOM'S BEET PICKLES

Place cut, cooked beets in sealers.

Completely cover with the following, which has been boiled together:

1 c. water
2 c. vinegar
3/4 c. brown sugar
1/2 tbsp. salt

Does 4 pints.

GOODY, GOOEY BAR-B-Q BANANA SPLITS

Cut 1 banana in half crosswise, then lengthwise.

Place two short halves cut side up on a square of tin foil.

Sprinkle with miniature marshmallows, chocolate chips.

Wrap completely in foil and place over hot coals until chocolate is melted.

Messy but delicious!

The kids will love them and will enjoy making their own.

HAM PASTIES

Make pastry of the following:

5 c. flour
1 tsp. baking powder
2 tsp. salt
4 tsp. brown sugar
1 pound lard
1 egg, slightly beaten with 1 tbsp. vinegar and water to make 3/4 cup.

Roll and cut in circles to fold over following filling:

3 c. finely diced cooked ham
2 tbsp. chopped green pepper
Pimento, if desired
1 tbsp. minced onions
1 can undiluted cream of mushroom soup

Close pasties with tines of fork, put slit in top and brush with mixture of:

1 egg, beaten
1 tbsp. water

Sprinkle with sesame, caraway or poppy seeds.

Bake at 400 degrees until brown.

May be frozen and reheated.

We can love according to how much we have permitted God to do for us and in us. We can love in direct proportion to how much freedom we have accepted at His hand in our own lives.

BEST CHILI SAUCE

24 good-sized tomatoes, cut small

Chop in blender, or finely by hand:

6 large onions
6 large pears
6 large apples
2 large red peppers

Place in large pan and add:

4 c. white sugar
2 tbsp. salt
3 1/2 c. vinegar

Place half a box of mixed pickle spice in a cloth bag. Tie tightly and add to mixture.

Boil about 2 hours, stirring regularly.

Leave the spice bag in to suit taste.

NEVERFAIL PASTRY

Cut and mix:

1 pound lard
5 c. flour
4 tsp. brown sugar
1 tsp. baking powder
2 tsp. salt

Beat:

1 egg
1 tbsp. vinegar

Add enough water to make 3/4 c. and add to flour mixture.

If we love, we cannot put ourselves in the position of having to endure hurt feelings, of losing the wasted hours required to nurse and pamper our own touchiness.

NUTS AND BOLTS

Mix:

5 tbsp. melted butter (no substitute)
5 tbsp. salad oil
1/2 tsp. onion salt
1/2 tsp. garlic salt
1/2 tsp. celery salt

Place in large roaster:

3 c. Cheerios
3 c. Rice Chex
3 c. Wheat Chex
1 pkg. pretzel sticks
Assorted nuts or peanuts

Pour butter mixture evenly over cereal, mixing well.

Bake in slow oven (250 - 275 degrees) for about 2 hours, stirring occasionally.

Stores well and makes a nice Christmas holiday treat.

MOM'S CHOCOLATE SAUCE

(good over warm, white cake)

Bring to boil:

1 1/2 c. milk

Mix together and add to boiling milk:

1/2 c. sugar
2 dessert spoons cornstarch
1 dessert spoon cocoa
Dash of salt
Little milk

Bring to boil. stirring constantly until thickened.

Remove from heat. Add a bit of butter and vanilla.

(A dessert spoon means soup-spoon size!)
